§ 30-151. Additional definitions.

  • In addition to the definitions set forth in the state department of health regulations, the following definitions shall be applicable to the enforcement of this article:

    Full service food facility means an establishment that serves a variety of food types and utilizes the following equipment: cooking equipment requiring a vent hood system; grease interceptor; floor drains; utility sink; three-compartment sink and/or dishwasher; multiuse utensils and tableware.

    Light service food facility means food facility serving precooked foods or foods requiring no cooking or little preparation; generally requires a grease interceptor and uses three compartment sink and disposable tableware.

    Medium service food facility means an establishment that uses cooking equipment and meets the same requirements as a full service facility (i.e., requiring grease interceptor, floor drains, etc.) but utilizes single service, disposable tableware.
